We're Aaron (aka "Carter") and Lauren, Pagosa locals dedicated to providing our community with fresh, year-round healthy food.
Aaron, descended from traditional farmers, found his calling in Pagosa as a "fun-guy" farmer after years of soul-searching. Lauren, driven by mushrooms' health benefits, immersed herself in culinary applications and nutrition.
Recognizing Pagosa's need for fresher options, they combined their passions to launch this venture.
And so, our mission extends beyond offering locally cultivated mushroom varieties; we aim to nurture your well-being and support your health journey through these wholesome, nutrient-rich super foods.
We believe that good food and good health go hand in hand. Each mushroom variety we cultivate, from the brain-boosting lion's mane to the robust and earthy maitake, is carefully grown with love and dedication and packed with natural goodness.

Quietly tucked away in Aspen Springs, our farm reimagines agriculture by transforming a pre-used shipping container into a state-of-the-art mushroom cultivation environment.
Here, we merged innovation with the tradition of farming to bring the freshest, most flavorful mushrooms from our container to your table.
Our 40' container features three specialized rooms—a lab, colonization room, and fruiting room—with precise climate control for optimal growth.

The Growing Process

Step 1: Innoculation
Our mushroom journey starts with inoculation—introducing spores or spawn into a nutrient-rich substrate. In our controlled environment, we perform this critical step with precision, mixing inoculated material thoroughly in sterile grow bags. This careful process minimizes contamination and sets the foundation for healthy mushroom growth.

Step 2: Colonization
After inoculation, the substrate moves to our colonization room. Here, in carefully controlled conditions, mycelium spreads through the substrate over several weeks. This critical phase forms a dense, white block that serves as the foundation for mushroom development. We closely monitor the process to ensure healthy, contamination-free growth.

Step 3: Fruiting
Step 4: Your RoleOnce colonized, the mycelium enters our fruiting room. Here, we adjust conditions to mimic nature, triggering mushroom growth. Within days to weeks, small pins emerge and mature into harvest-ready fruiting bodies.
We hand-harvest each 'shroom, carefully box them, and place them into cold storage until your dinner plate is ready.

The heart of our harvest - these three varieties offer a variety of health benefits and make for an easy addition to any meal.
Now Growing: Pink Oysters, Yellow Oysters, Black King Oysters, Chestnuts, Maitakes, Reishi
We like to switch things up. Varieties like Pink and Yellow Oysters and Black King Oysters will be rotated on a biweekly basis. Chestnuts and Maitakes take longer to grow, so these will be offered on a pop-up basis.
